Backburnered

Ahhhhhhhhh, these days are flying by WAY too fast. I literally don’t have a second to do anything BUT work at work now that I’ve become a real-live employee. And then to class right from there! I thought I had no down time before, but now I REALLY have no downtime. So with that in mind, yesterday is going to have to get the highlights treatment.

Lunch was massaged kale + arugula + spaghetti salad:

Do you know how rare it is to find these sweet plantain chips?! Every time I see plantain chips in the store, I get excited … until I see the big “not sweet” emblazoned across the bag. Yayyyy, maduros! These were delicious.

Later in the afternoon, I had my yogurt + ricotta + fruit + hemp:

And as I was on my way out of the office, I spied something new on the evil conference room table:

I stopped on the way to class for the usual samples: three teeny cubes of French comte cheese and some hunks of Tate’s Bakeshop chocolate chip cookies. Dinner in class was a random crazy salad with arugula, one of Jessica’s omelets from my work breakfast on Friday, steamed kale stems and broccoli, strawberries and blackberries (from Olga), and TJ’s smoky peach salsa from Elisabeth.

Emily also handed over the last 1/4 cup or so of her chicken-veggie soup, and that went right down the hatch:

And cereal medley + yogurt + fruit salad for dessert (also what I had for breakfast yesterday, if you were curious!):

Breakfast this morning was overnight cereal with about 1 cup of yogurt and 1/2 cup strawberry medley/golean crunch. The big pile o’ fruit (berries from Olga, banana from Jessica, apples/pears/peaches from me) landed on top of the marinated cereal this morning. Topped with hemp, coconut, nutmeg, and cardamom:

I’m 98% sure I’m heading to try another hot yoga class after work this evening, so it will be another late night. Ack, my 8-hours-of-sleep requirement just keeps getting pushed to the backburner. I’m not entirely sure it’s a realistic expectation while I’m in grad school. Hmph. My body is angry at me for denying it adequate rest! Subway naps can only do so much to alleviate the sleep debt. But I don’t see a solution since I get home from class at 10:30 and I have to get up at 6 just to get to work on time! Rararararar, quite the debacle. Can you extend the day just two more hours for me? Please?

    And I LOVE sweet plantain chips, I also can never find them anywhere!

    I will do everything in my power to extend the day, just so we can all get that 8 hrs of sleep in!

    only if you can do the same for me! between work, kids, life, and trying to get in some me time (aka workout time) im running on 6 hours of sleep a night- NOT good! i need 8! this is a big change for me, i used to be ok on only a few hours of sleep.
    i’ll work on extending the clock.. lol

    Oh and I like to think I’ve come a long way from my picky eater days, but when I saw your salad with broccoli and strawberries my first thought was, You can eat those two together?! Haha guess I still have a ways to go!

    Those sweet plantain chips look delicious–I’ve never seen them before! I love that cereal/fruit/yogurt combo, too. It looks so creamy and tasty.

    Ugh I know what you mean about wanting to extend days. Especially when I was in school–I never had enough time! Even now, I end up going to bed late cause I’m trying to finish everything. Then I have to wake up early, and the lack of sleep is getting to me, too 😦 I hope you can figure something out where you can get some extra rest!

    Oh man, if I had a dime for all the days I wish I could have two extra hours, I’d be rich! I’m also addicted to plantain chips. I just found out about them not too long ago when I was at my uncle’s house and he was eating them…they are SO SO good! They are like potato chips, but less unhealthy!!

    i just tried sweet plantain chips at a cuban restaurant about a month ago, not too bad!

    i’d give you two more hours if i had some myself…lets find someone that doesn’t need their hours and steal it from them. haha!

    I LOVE sweet plantains but have only ever seen the non-sweet chips. Will keep a look-out! Is that a matzoh ball in your soup?!!!!!

    i am trying to find some extra hours too…though granted, if I didn’t waste so much time faffing around on facebook or in grocery stores, I’d probably have more πŸ˜›

    Ack that is a bummer that you haven’t gotten enough sleep lately. I know that can wreck a day for sure. And what is it about that Crunch n Munch kind of stuff?? I mean, seriously – it’s not the kind of snack I crave, I would never look at it twice in a store, but if I have even a bite, I never fail to like, avalanche my appetite all over it. Totally addiction-inducing. That is a big no-thank-you from me. Why is it that some foods have that effect???

    Don’t you hate (or love when you shouldn’t!) those tables at work that seem to grow all your favorite “bad” foods?!?! Do all workplaces have these? Why doesn’t anyone leave a veggie tray out to share?

    peach salsa is for sure the best kind in my eyes! i agree, time is flying by WAY too fast. i wish i could freeze time like the chick in that old sitcom, out of this world, okay maybe nobody remembers this one but her dad lived in space. annnnyway, you are a hemp sprinkling maniac, what are the benefits of hemp? inquiring minds want to know! have a great hump day πŸ™‚

    What a crazy schedule! If I find out how to extend the day, I’ll let you know. Good luck with things, just think that one day you’ll just have to work and thats it!
