Who loves her new dishes?

I do!

Dinner last night was the other half of my out-of-this-world caramelized onion and goat cheese pizza:

img_7644

And dessert was a pile of strawberries, blood orange pieces, and fresh pineapple topped with 1/4 cup of plain Oikos, nutmeg, and unsweetened coconut (with 1/2 of a chocolate chip oatmeal cookie from the freezer bag):

New plate love:

There may have also been some Hershey’s spears dipped in cashew-almond butter:

img_7657

And some crumbs from the Passover sponge cake I made:

img_7660

I just got back from the gym where I did the same workout as Wednesday so that I will soon be running pain-free with hip adductors of steel. Stats: 1 hour 28 minutes, 416 calories, 114 average heart rate, 172 max.

I am now patiently awaiting the arrival of my sister Emily. She took an overnight
flight from San Francisco and should be here momentarily. I haven’t seen her in over a year! She’s coming for the weekend in honor of her best friend’s birthday, but her trip sadly coincides with me needing to get a bus at the crack of dawn tomorrow morning to head up to MA for Passover with mom and Easter with dad. But we’ve got all day today to visit, yay!

Are you going to see any long-lost family members this weekend?

Win pistachios!

Dessert again?

Since I had cupcakes for dinner at work yesterday, I only had room for dessert last night.

img_7588

Wait is that some cupcake in there? How did that happen?! 😛

The platter (aka teacup saucer) included a slice of healthy cheese cake and two itty bitty pieces of cupcake that “didn’t fit” in the freezer container last night, along with a Newman’s prune and dried apricot and 1/3 cup of fresh pineapple.

img_7587

(Ugh, I hate the lighting in my apartment at night. Yellow always ends up looking so yellow.)

This also happened:

img_7591

Those are strawberries stuffed with cashew-almond butter and not chocolate. I’m aware that I’ve started to make this distinction every time the butter makes its appearance. I think it’s probably more to remind myself that, while I may have eaten an entire tub of chocolate frosting yesterday, these strawberries played no part in the incident.

img_75931I also mixed up today’s breakfast last night (and licked the bowl several times along the way). I’ve been wanting to try the Bob’s Red Mill extra thick rolled oats for ages since I love “bite and texture” in my food … and this package promised to deliver both of those critical elements. (I usually opt for steel-cut or whole oat groats because I know they’ll give me the right chew.) Would this extra thick variety would be any different from regular old-fashioned rolled oats?

Into the mix went 1/4 cup extra thick rolled oats, 1/4 cup  yogurt of the week, 1/4 cup unsweetened soymilk, 2 tbsp PB2, 1 tbsp unsweetened cocoa powder, and 1 tbsp Newman’s dried berry blend. After a quiet night in the fridge and a quick stir, my overnight oats definitely passed the visual thickness test:

img_7598

They were so thick, in fact, that I actually added another splash of soymilk this morning (along with chopped strawberries and unsweetened coconut):

img_76051

And they were chewy, thank goodness! I can tell right now that they will be ideal breakfast cookie material. I’ll have to experiment further to see how the “extra-thickness” holds up on the stovetop.

On the side, I had a seven-legged creature made out of an oven-toasted slice of pumpkin muffin (from my freezer’s bread bag) with a melty tbsp of cashew-almond butter and more sliced strawberry:

img_7602

With soymilked mexican sweet chili tea:

I’m enjoying my leisurely mini-break so far — no class today because of Passover and no work tomorrow because of Good Friday. There’s quite a bit on my list, but I’m fine with that since most of it is enjoyable!

Next on the agenda is my triumphant return to outside running! The sun is shining, my leg is feeling strong, and so am I 😀 I’m going to digest for a few, and then I will be gone with the wind. Just kidding. Slow and steady wins the race, right?

Are you slow and steady or fast and furious?

(Do you like nuts? Go enter my Pistachi-YES giveaway!)

Pistachi-YES (aka another giveaway!!)

Are you sad that pistachios have been recalled? I was, too, until I found out that the pistachios from Everybody’s Nuts are safe! Even better, Everybody’s Nuts has offered to send a prize pack of three bags of their yummy nuts to one lucky reader. Check the bottom of the post for more details!

img_7538

Dinner last night was more delicious Mediterranean pasta mix on top of about three cups spinach and arugula (looooooove arugula!). And love the parm:

img_7539

I chopped my pineapple and ate the core plus what I could salvage from the scraps for dessert. (The dark blob is not a turd. It is a fingerful of cashew-almond butter!)

img_7541

And, now for the giveaway! Like I said, Everybody’s Nuts is going to send three bags of their safe and salmonella-free nuts, each in a different flavor, to ONE lucky reader! To enter, all you have to do is:

1. Leave me a comment on this post telling me why nut recalls make you sad

AND

2. Link back to this contest from your blog OR email me at talesofexpansion@gmail.com to let me know that you are blogless but still want to enter!

The contest will run until 6pm EST on Monday 4/13 to give you ample time to recover from any holiday-ing this weekend. Go nuts!! (I had to do it. Could not help myself.)

Friday and Monday collide

First things first: don’t forget to go visit Meghann’s Bake Sale and place a bid on my biscotti bites (or one of the other amazing treats up for auction) to support leukemia research!

Next, what is wrong with my body?? The pain in my leg has migrated to the back top of my right thigh and become super sharp every time I take a step! And I went so easy on it this morning at the gym. I’m back on the ice pack and ibuprofen now — hopefully it is better in the morning. Ugh.

Anyway, today’s food!

My morning yogurt snack today included a one-cup mixture of plain Oikos (yes, even I need to take a break from making my own sometimes), ricotta, mashed banana, chopped dried apricot, strawberries, nutmeg, cardamom, and a sprinkling of Total Cranberry Crunch (it’s good, but it’s no golean crunch):

picture-448

I opened a new pack of mints:

picture-446

And proceeded to eat all 12 (though, to be fair, it took me from 10am to 7pm to accomplish this mind-boggling feat).

I was so excited to eat today’s lunch because it included delicious leftovers from Friday’s shower! My main course incorporated Maria’s Mediterranean-ish pasta. Just like I did for dinner last night, I combined Maria’s pasta with some of my roommate Tara’s similarly seasoned whole wheat pasta for an extra punch of whole grain satisfaction. I further bulked the pasta with cooked chicken that I found in my freezer left over from still another work event 🙂 Today’s cup:

picture-450

On the side, I had 1/2 cup of asparagus and portabello with curry butter from Saturday:

picture-454

And some lettuce and tomatoes from Deborah’s salad:

picture-463

Mildred brought in leftovers from her husband’s birthday part this weekend, so obviously that involved me having tastes of her yucca and chivo:

picture-457

And lemony birthday cake, with a thick layer of custard (ahhh, yum!) in the middle:

picture-458

Mid-afternoon, Nydia presented me with some pastelon de calabaza that she made over the weekend:

picture-469

It’s lightly sweetened cinnamony pumpkin layered with seasoned ground meat and perfectly salty-sweet, mmmm.

I’m pretty sure I was saying, mmmmmm, all day long.

I was still hungry (seriously, when will my appetite realize I am not working out the way I was before??), so I had my packed serving of Newman’s spelt pretzels with 2 tbsp of Inginia’s guacamole from Friday.

picture-465

And right before I left, I had a Teddy Graham courtesy of Katty:

picture-473

And a Newman’s chocolate alphabet cookie courtesy of me:

picture-474

Dinner at class involved more of Friday’s bounty: Maria’s salad plus some slices of spicy tamale and manchego cheese samples from the gourmet deli:

img_7468

Ahhh these tamales were delicious but WAY spicier than the rest!! My mouth was on fire for 10 minutes. In fact, it was post-salad that I ended up inhaling the rest of my pack of wintergreens. I needed ice!

img_7471

On the side, I had about 1/4 cup of Emily’s chicken vegetable soup from Hale & Hearty:

img_7479

For dessert, I ate this PistachiOh! Dr. Weil bar that Melissa brought to the blogger brunch a few weeks back:

img_7472

I loved the spices in there. I’m pretty sure cardamom was involved.

img_7476

And these sample crumbs of Tate’s Bakeshop cookies, also from the gourmet deli:

img_7477

(I know they look huge, but they were really more like the size of my thumbnail!)

And near the end of class, I was completely dragging and in pain and falling asleep and even feeling slightly delirious with fatigue, so I ate the rest (12 or so) of those Newman’s chocolate alphabet cookies to snap me out of it. Their oreo-ness did the trick.

And check out this AHHHHHHmazing Fage giveaway going on at The Hungry Yogini. Free yogurt for a month?? I might just die of happiness if I win that one!

And you can also win some Annie’s treats at Danica’s Daily!

I am going to sleep with my fingers crossed that (1) my leg starts doing what it’s told, (2) I win those giveaways, and (3) someone bids on my biscotti bites!

What are you crossing your fingers for today?

Tomorrow’s the day

As usual, I did some snacking while I got my lunches ready for the week. Among other things, I had a dried Newman’s apricot while I was chopping them for my yogurts:

img_7379

img_7381I ate the pretty one in the middle 😀

I also broke into these spelt pretzels from Newman’s because they seemed like they would pair nicely with the guacamole I’m planning as a snack for tomorrow. I ate two just to make sure I liked them 😛 I couldn’t really taste any difference between these and regular non-spelt pretzels, but I’m not really a pretzel connoisseur, either. I do think it’s worth noting that these pretzels are not whole grain, as they are made with plain spelt flour and not whole spelt flour:

img_7383

img_7386img_7390

Dinner was more leftovers from Friday’s shower. I mixed Maria’s pasta with a similarly-seasoned whole wheat pasta that my roommate Tara left behind this weekend. Careful inspection seemed to indicate that the pasta included tomatoes, spinach, pine nuts, olives, sun-dried tomatoes, and non-fat feta. Perfecto! I had a cup of the pasta mix on top of a giant bowl of Maria’s green salad:

img_7405

Plus four tamale slices (two spicy and two plain chicken) for garnish.

img_7408

Ooh, I almost forgot to mention that I mixed in the stems from Tuesday‘s caramelized onions.

img_7412

Yum, perfect sweetness!

friendsSpeaking of perfect sweetness, Yasmin from It’s a Wrap! has passed this sweet Friends award onto me. I felt so touched after reading the award description:

These blogs are exceedingly charming. These kind bloggers aim to find and to be friends. Our hope is that when the ribbons of these prizes are cut, even more friendships are propagated.

Awwwwww, exceedingly charming?? Thanks, Yasmin! I’m so glad I’ve “met” you.

The next part of the award, of course, is that I need to deliver it to eight other deserving bloggers, who should then pass it to eight more (until everyone ends up with it :P). I’ve gotten to know so many great ladies in the short time I’ve been blogging … and these eight are just a few of them.

  1. What’s For Dinner?
  2. Banana Cabana
  3. BranAppetit
  4. yum. run. !!!
  5. Bites of the Day
  6. Heather Eats Almond Butter
  7. SnackFace
  8. Healthing It

Thanks for your support and for coming back to see what I eat (and what I find) each day! You all inspire me to be a better scavenger, and you’re all invited to come over and help me with leftovers any time 😛

For dessert tonight, I defrosted the small and slightly mangled inaugural slice of the healthy(er) cheesecake I made Friday night:

img_7413

I also got this genius idea to stuff a giant strawberry with homemade cashew-almond butter and a little chunk of Hershey’s:

img_7415

Wowwwwwwwwwwwaaaaa. I will be doing this again.

img_7426

And finally, in honor of Meghann’s Bake Sale that starts tomorrow (Monday), I had a dollop of healthy cream cheese icing with two jasmine tea biscotti bites:

img_7418

Meghann put her Baker’s Spotlight on these goodies last week, and you can see it here if you scroll down to the bottom of the page. Not to toot my own horn (ok, yes to toot my own horn), these bites are sooo good. I keep forgetting just how good until I take one bite and want 300 more. And they’re healthy 🙂 So head over to The Inner Workings of a College Graduate tomorrow to place your bid!! 😀

img_7421

Tomorrow morning, I’ll be going back to the gym for the first time in over a week (the longest week ever). I am hoping that my ruined leg has had enough “quiet time” to support me in this endeavor because the rest of my body is desperately craving some heart-pumping activity!

Do you have any fresh starts planned for this week?
