Lunch does not grow on trees

But first, thanks to everyone who sent some yoga motivation my way last night. I will try again eventually. Second, the ear plugs were phenomenal last night, yay sleep! And third, breakfast this morning was something old and something new. My last piece of carrot cake:

And spicy cinnamon peanut butter hot chocolate because I needed something to zap me into the Monday spirit!

I made the hot chocolate with 1/3 cup unsweetened Silk, 2/3 cup water, 1 tbsp unsweetened cocoa powder, 1 tsp sugar in the raw, cinnamon, cayenne pepper, and just under 1 tbsp pb. This was my first time putting pb in cocoa, and it was soooooo good!

And, of course, I hit the gym before brekkie for arms + StairMaster. Stats: 1 hour, 10 minutes; 479 calories; 136 average heart rate; 167 highest.

Lunch

As usual, I did my Sunday cooking yesterday to unwind and get myself ready for the week. I’ll take you right through the process with me.

I finally found tofu for a decent price (at Whole Foods, of all places) on Friday, and I immediately put it in the freezer when I got home that night. When I’m planning to eat tofu in actual pieces (as opposed to pureed or disguised somehow), I always always freeze it first — I find it does wonders for the texture. I took the tofu out of the freezer yesterday, sandwiched it between layers of paper towels and two pizza stones, topped it with more oven-safe heavy dishware, and put it in my off oven (remember, I have a pilot light, so it stays warm in there) to thaw and drain. Once it was thawed enough (maybe two hours later), I sliced it into very thin pieces and returned it to the sandwich setup:

When the tofu was thoroughly thawed and drained, I followed Gliding Calm‘s brilliant tofu rub process. I love tofu cooked in restaurants, but this is the only home-cooking method I’ve found that works just as well. For my rub, I mixed honey, Thai red curry paste, chili powder, olive oil, cinnamon, ginger, garlic, white rice vinegar, and maybe more:

I coated the tofu:

And baked until perfectly crisped:

But still delicious! Meanwhile, I chopped broccoli, kale, red cabbage, and carrot and mixed it with olive oil, balsamic vinegar, garlic, coarse sea salt, and freshly ground black pepper for roasting:

I mixed the roasted veggies with the leftover sofrito rice/barley/cabbage from the past two weeks (don’t worry, I roasted this also to kill off anything spooky) and the tofu for my lunch “entree”:

Here’s an overview of the entire lunch spread which also includes yogurt with banana/apple/strawberries/spices, an orange, carrot sticks, an apple, tbsp pb, tbsp raisins, and a mini Luna:

Consumption of the apple, pb, raisins, and mini-Luna is entirely dependent on my level of success with nosing out extra food throughout the day that could qualify as dinner since I’ll be in class until 8. We’ll see what happens!

A mile here, a mile there

But first, I inadvertently “improvised” a bit during our run, so Kate and I ended up squeezing out an extra mile. I don’t know where it happened, but go us! Running stats: 6.94 miles; 1 hour, 10 minutes; 624 calories; 157 average heart rate; 171 highest heart rate. That’s the farthest I’ve ever run in one go! Again, I so wish I’d had my camera so that I could have taken some pictures of the gorgeous houses with giant White House-esque columns — so out of place in the city! Near the end, Kate and I had to maneuver around some flag footballers, a game of cricket (the park was buzzing with activity today despite the windy 30 degrees — must have been sunshine excitement), and a home stretch covered in ice, but we survived without incident.

I got home, drank lots of water, and starting preparing a big ol’ lunch, because what’s the point of running if you don’t follow it with a huge meal?

On the side, I had the last 1/3 plantain, browned in 1 tsp canola oil and then steamed for a minute or two in 1/4 cup boiling water (until the water sizzled away). My main course “Mexican” pile included a bed of salad (from the office food I brought home yesterday), 3/4 cup black beans, the other egg yolk from blondie night, sofrito rice/barley and the rice from yesterday’s office food, 1/3 cup Wholly Guacamole, and 1/4 cup Fage 0 %.

I literally licked the plate clean. Although, when do I not?

After lunch, I flew in and out of the shower and into bed for a glorious, clean hour-long nap! I woke up ready for food again (surprise). I was potentially going to meet some friends at a restaurant tonight, but after careful review of my financial situation, I had to conclude that it was not in the cards :-/.

Lucky for me, I have looooooads of food in the fridge from this past week. For dinner, I heated two chicken tamale halves and one cup of Belkis’ beans from my work lunch on Thursday:

For dessert, I topped yesterday’s corn tortilla with a tbsp of peanut butter, half a sliced banana, a tbsp of chocolate chips, and a sprinkle of cinnamon … and heated it in the oven for five minutes to get it all melty. With a side of sugar cookie sleigh ride tea:

Tic-tac-lunch

Just a quickie to update you on my lunch plans …

Breakfast

I didn’t get to bed until midnight last night, so I slept right until 7 (I’ll have to make up the missing hour this weekend :-D). So nice to have daylight first thing in the morning! Breakfast today was another cup of my carrot cake crockpot oats with 1/2 cup yogurt, cinnamon, and … the scraps of blondie I saved after baking Tuesday night!

The End.

Compromise

I really really really wanted pizza for dinner tonight, but I didn’t have tomato sauce. And the pizza place is four long blocks away. And the grocery store is six longer blocks away. And it’s snowing. I could have made some sort of crazy pumpkin sauce or even used my red lentil soup as sauce since it’s so thick, but I was only in the mood for some traditional cheesy, saucy pizza. So I gave up. I made pasta instead. Some things aren’t meant to be.

I used 1/3 cup dry whole wheat pasta. While it was boiling, I chopped more red cabbage — the only available vegetable I have (my carrots are for work snacks) — and tossed that in with the pasta. Then I started to worry about not having enough protein, especially after today’s exercise-fest … until I remembered a trick my stepmom taught me years and years ago when pasta was all I ever ate (literally).  I beat an egg in a bowl, poured it into the boiling pasta and cabbage, gave a little stir, and voila! Protein problem solved:

The fun thing about red cabbage is that it turns everything a deep blue, and blue is my favorite color! Here’s the pasta water after it all finished cooking:

To my pasta bowl, I added a Tbsp pesto (pre-made!), grated fresh parmesan, grated homemade cheddar, and freshly ground black pepper:
