Systematic food maintenance

Breakfast this morning was strawberry cheesecake ice cream oatmeal!

img_3985

I’m trying to use up all the things that need to be used, so I made a big batch of this concoction. Good thing it is delicious! Into the pot went a little bit over 1 cup of whey from Greek yogurt-making, 1 cup of “ice cream” mixture from yesterday‘s strawberry cheesecake ice cream (minus the red velvet crumbs), a few freezer burned strawberries and blueberries I found during the deep-clean yesterday, a chopped frozen banana, 1 cup of cooked brown basmati rice from two weeks ago, 1/2 cup dry old-fashioned oats, and 2/3 cup instant white grits. I ate about 3/4 cup of the final product topped with a chopped strawberry and cinnamon (obv). And jasmine green “artwork” tea on the side:

I feel so relaxed today after organizing everything in the kitchen last night! I hope the roommates don’t kill me when they get home and can’t find any of their stuff . But just look at how beautiful and easy everything is! Here’s the pantry with tea on the top shelf, common staples (oats, olive oil, sea salt) and coffee on the next, Brig and Tara’s canned foods on the next, and my whole grains on the bottom:

img_3988And the cupboard with Brigitte’s baking mixes, flour, and sugar (and my whole wheat flour wayyyy on the right) on the top; her rices, pastas, and sauces on the next shelf; and our spices and seasonings on the bottom:

img_3986

And finally, the pièce de résistance: the freezer! Specially marked cardboard boxes for Brig’s ice packs, breads, and meats are on the left; her leftovers are in the middle; and my leftovers are on the right:

img_3987

Poor Tara doesn’t buy much food because finding space for it is such a painful process. I don’t blame her. Hopefully the new system will help her out … and last more than a week!

I’m off to tackle the next thing on my list. Thank goodness I have tomorrow off! Do you?

Head start

Happy Valentine’s Day!

Off-topic for a second, look at the spider plant shadow I found on my bedroom wall last night:

img_3906

For a moment, I tricked myself into thinking I was somewhere tropical with a palm tree hanging over my head.

Anyway, while I was shuffling around after work yesterday with enough food for a small army battling it out in my stomach, I got a head start on one of my weekend kitchen projects. I chopped several aging apples that I rescued from work and from the roommates and added them to a pot with a splash of water, loads of cinnamon, and a pile of whole cloves. I simmered everything until tender and then immersion-blended to make apple butter. Before and after:

img_3898

I also acted on a tip I got from Victoria several weeks back and made some vegetable broth. Ever since reading her suggestion, I’ve been collecting veggie scraps — carrot peels, asparagus ends, green been stems, apple cores, slimy roommate-forgotten scallions, etc. — in a bag in the freezer. I simmered them for hours last night in a pot with water and came out with the best veggie stock I’ve ever tasted!  Before, after, after, and after:

img_3886img_3902img_39031img_3904

The stock is now relaxing in the freezer to rest up for its next mission:

img_3905

For breakfast today, I made overnight oats of sorts. Last night, I mixed together the last 1/2 cup of my pumpkin pie crockpot oats with 1/2 cup of the cranberry cottage cheese yogurt mixture I had with my oats yesterday and some of the above apple butter. It martinated and meshed together all night in the fridge, and I topped it with chopped strawberries and golean crunch this morning:

Alongside a cup of Tj’s pomegranate white tea from Vani:

img_3909

I also did some heavy taste-testing of the “ice cream” concoction I made to bring to bRUNch with the ladies later today.

Some business before I head out:

1. Go visit Megan’s Munchies for info on entering her Banana Nut Cheerios giveaway!

2. Angela at Oh She Glows is giving away one of her awesome hoodies. My fingers are crossed because I need to win this one!

3. I’ve been bag-tagged by Mel at food for fuel. So I have to (1) show you the bag I carry:

img_3807img_3804

and (2) tell you that it cost $26 at a Kohl’s in Athens, GA when I was visiting my friend “wife” there a couple years ago. The bag and the story that goes with it are both pretty boring I know, but I’m all about functional accessories. This bag fits a book, notepads, keys, a pen, and an extra expandable bag (often used for the free food I tend to find all over the place) in the outer sections and has a zippered center section for my more valuable things (phone, metrocard, wallet, etc).

The final step of bag tag is to (3) tag someone else. I am going to bag-tag my good friend The Professional Vegan, a high-powered lawyer who has committed to replacing every single non-vegan item in her professional wardrobe with one that is fully vegan-compliant and just as sophisticated. Professional Vegan, tell us about your tote-style!

Have a great day!

Ohhhh, the expansion!

Just because I try to keep my belly expansion to a minimum doesn’t mean I always succeed!

The day started out innocently enough with Mildred, the office Cupid, coming around and handing out Hershey’s Kisses. (I responsibly dropped my kisses into the empty tissue box on my desk where I “hide” things like this from myself.) Here she is (on the right) with Belkis and Jennifer:

img_3822

When Vianni arrived in her gold boots, however, I knew things were about to get out of hand:

img_3823

img_3845The festivities for the day included a secret office valentine gift swap. Jennifer was my Cupid and got these adorable socks for me. I can’t wait to wear them tomorrow!

Our big Valen-dining lunch feast began at 12:30. We each had the option to contribute $5 to ordering food from Caridad or to make and bring something. Obviously I made something — I can’t afford $5 for lunch!

Here’s the pretty table decor, complete with festively wrapped apples as party favors:

img_3837

(I took two of those apples home :-)).

And here’s the food vanishing …

img_3828

… onto my BIG plate:

img_3832

This plate included maduros (my favorite!!!!) and tostones:

img_3833

Grilled steak, onions, and veggies:

img_3836

Chicken:

img_3834

And beans:

img_3835

I had more veggies and beans.

And I also had lots of dessert (duh). My first (small but full) plate included a slice of Orange Cranberry Dark Chocolate Heart Tart (all of which got eaten except for two crumbly pieces that I brought home!), a chocolate-covered strawberry, three Italian cookies, an extra piece of tart crust (the crust tasted like some sort of amazing dark dark chocolate butterscotch toffee), and a big scoop of Baskin-Robbins Gold Medal Ribbon ice cream:

Plate #2:

#3:

img_3841

And I decided I might as well finish the ice cream carton:

img_3844

And keep snacking on cookies for the rest of the afternoon:

img_3849

With peanut butter:

img_38501

And tea:

img_3852

It’s pretty safe to assume that I ate about four times as many cookies as pictured (and I also brought three more giant ones home for my freezer stash).

When I got home, I had even more sugar excitement waiting for me! My prize for winning BSI: Spinach had arrived from Brandi, wrapped like the treasure it was:

That’s right, my truffles from The Chocolate Spike are here!

I wanted to dive into this goldmine the second I opened it, but I decided to wait until I sober up from all the sugar I’ve already consumed today. The treats are currently resting/hiding safely in my freezer until I am able to appreciate them in the way they deserve!

In the meantime, however, I snacked on several things I did not need  — pita chips, cookie crumbs, other items that are hiding in the freezer, etc. — while I was puttering around in the kitchen. I also made a new centerpiece for my table. My coworker Nitza received this beautiful rose from a parent today:

img_3846

She’s going out of town, so she gave the rose to me for safe-keeping. I combined it with the conversation hearts I received yesterday from my blogger secret cupid:

img_3884

The full effect:

img_3897

I’m still stuffed to the gills, so I’m blogging in bed with a mug of gingerbread spice tea, my cupcake t-shirt (designed by a little girl from the nursery school where I worked last year), my cupcake tattoo (designed by the tattoo guy around the corner and pinkified by my cousin Rachel), and my flannel cupcake pajama pants (a gift from my sister Emily).

img_3893img_3894

I’m big on symbolism.

Anyway, I’ve got loads of plans for this long weekend, the most exciting of which (for me) is the prospect of a kitchen deep-clean and organizing-fest while the roommates are out of town! I’ve also got some single-girl Valentine’s fun lined up and plenty of homework to keep me busy.

What should we bet that Monday night I’ll still be whining, “Where did all the time go?”

Enjoy your Valentine’s day tomorrow!

Heart health

img_3817

So, stats for the gym this morning (arms on the step and 30 mins StairMaster): 1 hour and 7 minutes, 399 calories, average heart rate 127, max 157. Now, here’s where having both a blog and a heart rate monitor come in handy. One month ago, for the exact same workout, these were my stats: 1 hour and 6 minutes, 539 calories, average heart rate 149, max 176. As I mentioned yesterday, this is both good news and bad news. Clearly, my fitness is increasing. But now I need to change things up ASAP! What are your suggestions for increasing intensity while continuing to combine strength and cardio in under one hour???

Breakfast this morning was soymilky black tea and pumpkin pie crockpot oats:

img_3808

With 1/2 cup “yogurt,” 2 crumbled graham sticks, 1 Earl Grey Biscotti Bite, cinnamon, nutmeg, and a heart-shaped strawberry:

img_3819

My “yogurt” actually consisted of an immersion-blended combo of nonfat cottage cheese and Greek yogurt, cooked cranberries left from tart-making yesterday, cinnamon, vanilla, chopped dates, and a teeny bit of honey. I also may have stolen a small spoonful of real cream cheese icing that my roommate Brigitte made to frost the red velvet cake that she also made and plans to bring to a family gathering this weekend. Sorry, Brigitte — you know I can never resist your cream cheese icing!!

img_3816

We’re having a Valentine’s celebration lunch at work, so get ready for an exciting post later tonight!

In the meantime:

2. And check out the AMAZING homemade sushi scarf Mara is giving away at What’s for Dinner?!

3. Remember, I need your help with exercise suggestions! 😀

Blown away

It’s SO windy outside!! I had planned to run first thing this morning, but I was worried I’d get swept up and plunked down in Oz somewhere, so I decided to eat breakfast and do work homework until the howling tapered off a bit.

Today’s breakfast was the opposite of yesterday’s: yogurt ring-around-the-oatmeal.

img_3696

I had one cup pumpkin pie crockpot oats surrounded by 1/2 cup Greek yogurt and topped with 2 crumbled graham sticks, 1 chopped date, cinnamon, and nutmeg:

img_37011

The wind was still howling post-digestion, but I decided to suck it up and go out for a quick run anyway. First, I had this mini-snack of a spoonful of yogurt with three Kashi GoLean Crunch! clusters and a drizzle of soymilk:

img_3707

I did one loop around Prospect Park plus the jog from and to my apartment for a total of 4.1 miles. The wind may have been whipping debris in my face every 2.37 seconds, but the 53 degree sun felt nice :-). Stats: 44 minutes, 339 calories, 145 average heart rate, 163 max. I’ve noticed that my heart rate and amount of calories burned have a been a little lower this week … maybe I’m getting more in shape because of the extra running? But blah, that means I will have to step up the intensity!

When I got home, I put a piece of pumpkin kibbi in the oven to heat for lunch while I did the 20-minute Gentle Hatha #1 yoga download. I know I keep saying it, but this download is such a thorough and relaxing stretch!

Lunch took place immediately upon completion of the yoga:

img_3712

Along with soymilky chocolate caramel enchantment chai, I had a perfectly heated slice of pumpkin kibbi:

img_3716

And 1/2 cup immersion-blended mixture of nonfat cottage cheese and Greek yogurt topped with a chopped date and lots of powdered ginger:

img_3721

I also had half a grapefruit because it thought the yogurt was so pretty and couldn’t stay away:

img_3718

OK, time to get moving on the rest of today’s list. I’ve got errands, cooking, and more homework to bang out … and it’s already 1:00! Are you making progress on YOUR list today?
