Eat food. [Not] too much. Mostly plants.

I am so full of produce right now!

We had a lunchtime meeting (with snacks provided!) in one of the nursery rooms at noon today. Here are my goods aligned on the mini-ironing board:

First up was leftovers from yesterday‘s lunch: a variety bowl of my roasted veggies, Myrna’s chicken/rice/corn, and Belkis’ moro de habichuela.

Next: baby carrots and red peppers with a big pile of salsa for dipping.

I had two plates just like this.

And finally, grapes, apples, and an oatmeal chocolate chip cookie (baked by the nurse Sarah using the recipe on the Quaker canister, sooooo good).

I probably had two plates more of apples and grapes (and I wrapped up some extras, along with two cookies to take home after the meeting :-)! ).

I snacked on more leftover produce as the afternoon continued. Grapes and red peppers:

Plus approx a cup of Inginia’s chicken and veggies soup with kale, spinach, and mushrooms:

Pura came through our floor around 2 to to inform us that there was banana bread pudding from Sylvia’s … as in the queen of soul food.  This was amazing amazing pudding — complete with Nilla wafers all over the top! I had about 1/4 cup in the moment and packed up another cup to take home.

So much faster to do a post on the work computer than on my computer at home! I’m staying here a little late tonight because I’m meeting Gina and Kate at 7 for a delectable three-course meal as part of Dine In Brooklyn, the most wonderful week of the year. You can be sure I’ll be reporting back on the food excitement!

    Isn’t it interesting when strawberries are the size of apples and apples are the size of your head?

    I didn’t have many fruits and veggies today. 😦 I was too into peanut butter.

    Love your lunch! Look at all that produce 🙂

    Fruits: I had a banana in my oats for breakfast, an apple with lunch, and an orange in my salad at dinner.

    Veggies: Spinach leaves in my sammie for lunch, mixed green salad at dinner, mashed potatoes at dinner also

    I need to eat more veggies!!

    So much color today! I need to replenish my fruits and veggies tomorrow because I’m definitely running low. When you have to count raisins as a fruit serving, you know it’s time to go grocery shopping!

    I’m not sure exactly how many servings of fruit/veggies I get in a day, but it’s usually several. I actually love almost all types of produce and try to keep a lot on hand.

    MMM, I love the pumped up strawberries! They’re really good dipped into melted chocolate chips….You’re still getting a fruit serving in if you eat it this way, right??? JK!

    There were leftover sandwiches from a meeting at work today and I thought of you and how you dismantled the fish sandwich last week. I so wanted to grab one to take home to copy cat you, but they weren’t up for grabs by the time I had to leave!! Next time, next time! 🙂

    Ohh your lunch is so pretty and well-balanced!! haha!!

    I would say I get at least 3 servings of fruit everyday since I have it with most of my meals and snacks!!! And I try to eat veggies at least twice a day, veggies don’t store as well in a dorm room though….so I have to stick to the baby carrots a lot of the time!

    I actually realized I get in a lot more vegetables at dinner, but not lunch, so I decided to change that today! I had yellow bell pepper and asparagus to dip in my hummus w/ sweet jalapeno sauce, and I’m sure there were some veggies in my Tuscan Beans & Rice soup, too! I also had cranberries in my yogurt and a sliced apple with lunch, and golden raisins on top of my oatmeal this morning. Dinner will be a big stir-fry, I’m thinking, with chicken and asparagus, broccoli, and maybe cabbage!
