You need a microwave for that?

Happy March! In honor of the new month, I’ve been marching right through my to-do list all day :-D. Laundry’s done, one assignment is done, another assignment is part-done, and I’m thinking about starting work on my group presentation any second now …

For breakfast today, I finally experienced the delicacy that is the Fitnessista Breakfast Cookie. Look how huge it is!

Following Gina’s instructions, I prepped the cookie last night, making several adjustments because I don’t have protein powder. My b-fast cookie included:

  • 1/2 cup old-fashioned oats
  • 2 tbsp unsweetened cocoa powder
  • 1/2 large ripe banana, mashed
  • 1/4 cup fresh pumpkin puree
  • 2 chopped dates
  • 1 chopped Hershey’s Kiss
  • 1 tbsp crunchy peanut butter
  • 1 tbsp toasted spicy/salty/sweet pumpkin seeds
  • 2 tbsp unsweetened soymilk

I spread the whole thing on a plate in cookie shape and left it in the fridge overnight. It was still somewhat goopy this morning, so I put it in the freezer for about 20 minutes to firm up as I’ve seen other bloggers do. (I thought later that powdered milk would have been good to replace the protein powder. I might try that next time to see if it removes the need for freezing.)

When I finally got to sink my teeth in … YUM!! I ate it with a spoon from the inside out since the inside was less firm and melting faster — and I always like the edges of “baked goods” the best anyway:

I expected the cookie to take all of 30 seconds to eat, but it took much longer! It was firm and chewy (not to mention the frozen spots that tasted like ice cream), and I really loved the addition of pumpkin seeds because they kept my teeth so busy and added extra crunch. I was also worried that I would miss my hot oatmeal, but I kept the longing at bay with a cup of hot soymilky black tea:

I had expected to get hungry for a snack before lunch since I usually bulk up my oatmeal with yogurt, but there was no need! The cookie held me over for a solid four hours.

I kept my lunch main course light because I had big plans for lunch dessert! I mixed together a quick salmon and black bean salad with leftovers from making yesterday’s BSI Sweet ‘n’ Spicy Black Bean-Salmon Patties.

The salad had:

  • salvaged ends of rotton roommate lettuce
  • 1/4 cup canned salmon
  • 1/4 cup black beans
  • 1/4 cup yogurt
  • 2 tbsp salsa
  • 4 shredded baby carrots
  • 1 tsp dijon mustard
  • paprika
  • 1 oz fat free feta, 1 tbsp toasted pumpkin seeds, and freshly ground black pepper all sprinkled on top

This salad was actually so delicious that I kept refilling it with more lettuce because I didn’t want it to end!

img_4896For dessert, I had this little single-serving bag of Kettle Corn that I picked up from work. I hadn’t had kettle corn in ages, but I remember loving it!

Which brings us to the title of the post. This is microwave popcorn, and I forgot that I do not have a microwave! Whoops.

So, first I tried setting up the popcorn bag in my makeshift double boiler.

Once the cover was on, I waited. And waited. And waited. When there was still nothing after 30 minutes, I threw caution to the wind, tore open the bag, and dumped its contents straight into the pot:

Sweet sounds of popping began within mere minutes of the cover going on :-).

Meanwhile, there was melted kettle corn butter all over the empty bag that I definitely did not lick.

Mmmmm, it was better than I remembered!! Of course, I sprinkled cinnamon on top, too.

Dinner in phases

My meal schedule tends to evolve based on when and where I come into contact with food! While walking home from the subway station yesterday afternoon around 3:30, for example, I stopped into Union Market (purely for the samples, of course) and came upon dinner part 1, which I brought home and arranged prettily on a plate with decaf soymilky sweet coconut thai chai:

Findings included the sampler cup of antipasti, cheddar chunks on baby toast squares (I actually had 3 of these), and 3 cookies:

I also had a package waiting for me when I got home. (Is there anything as satisfying as interesting mail?) It was the Country Bob’s sauce I won from Allison at Green Dog Wine:

I have big plans for this sauce and a block of tofu. Just wait!

Dinner part 2 was 3/4 cup of the delicious soup that my coworker Nitza made for me along with my last 3 slices of kale-crust pizza (:-( so sad to see it go):

Dinner part 3 happened a couple hours later and was inspired by Heather who was inspired by Sarah to make peanut butter frozen yogurt. I followed Sarah’s procedure with 1/2 cup yogurt, 1 tsp peanut butter, and a drop of vanilla. But I couldn’t stop, so I also mixed in 1/3 mashed banana, 1 tsp unsweetened cocoa powder, and sprinkle of cinnamon and cardamom. I froze it for 20 minutes, stirred, and froze it for 20 more. Voila!

I considered sprinkling chocolate pieces over the top but decided against it in light of my cookie spree earlier in the afternoon. I had more fruit salad (also with cinnamon and cardamom) on the side instead:

The table of doom

How lucky can a girl get? :-D. I started the day with a two-hour staff meeting. During the meeting, I saw one of the therapists hovering suspiciously near my desk (because, if you recall, my desk is right near the conference room). When I got out of the meeting at 11, I found this enormous container of soup waiting for me!

Thanks, Nitza! The soup was HUGE and chunky and full of spices and seasonings and smelled like sofrito, mmmm. It was obviously too large for me to have all at once, so I decided I should set to work making a smaller container available! Yogurt to the rescue:

In addition to 1/2 cup of yogurt, the mix also contained chopped banana, chopped pear, nutmeg, cardamom, and a sprinkle of kashi golean crunch.

As soon as the yogurt was gone, I rinsed the container, filled it with a cup of soup, and put it in the fridge to rest for a few.

No sooner had the soup gone into the fridge than Myrna came zooming up to my desk with a dramatic whisper, “Sarah, I have CAKE.” Uh oh. (Side note: It was still only like 11:12 am at this point.) She unloaded her prize onto the infamous conference room table (again, right next to my desk). The cake was left over from a Dora-themed birthday party her daughter had gone to at Chuck-E-Cheese. Look at the cute Dora sticker on the foil wrapping!

And colorful frosting! I cut myself 1/3 of the piece she brought in (that piece over to the right) and split the other 2/3 between Jessica and Belkis so I wouldn’t be tempted to eat it all:

It turned my lips blue and my teeth pink. Whoops.

We had another meeting at noon. My supervisor, Heather, had promoted it as “bring your own lunch, and we’ll have some extra snacks and desserts.” Uh oh again. As per her instructions, I brought my own lunch. A cup of Nitza’s chunky soup (or at least it was a cup before the container tipped over completely in the bumpy microwave and lost all of its broth):

This soup was so hearty and delicious with those big chunks of meat and veggies. (And I had enough to bring two more cups home! Again, who’s the luckiest girl in the world?)

I also brought along the two-layer lunch I had packed. The top layer was three stuffed kale leaves:

And the bottom layer was a chopped tomato mixed with fat free feta:

picture-098img_4644And then there was the snack spread: baby carrots, tortilla chips, red pepper strips, french onion dip, salsa, red grapes, green grapes, apples, hershey’s kisses, chewy chips ahoy cookies, etc…. My agency seems incapable of doing food in a small way (which is just fine with me :-D).

I was impressed with the selection of fresh goods, so I made myself a produce sampler platter of peppers, carrots, salsa, apple slices, and grapes. I had two small plates that looked like this (note the child-sized pretend oven I was using as a table in the background):

I was quite satisfied after all of that (understandably), so I contented myself with 1/2 a cookie because it was right there:

There were tons of snacks left over at the end of the meeting, so of course I swept all of the remaining produce into a plastic bag to bring home (along with half a jar of salsa):

Back up at my desk, though, some unfortunate (or fortunate, depending on your perspective ;-)) things happened. Both of my afternoon visits rescheduled which meant I didn’t need to leave the office for the rest of the day. Good for catching up on work, but dangerous for the temptation that the conference room table often brings! Within moments, Rosalie (the one who missed her own work anniversary party with the mocha-frosted chocolate cake) made a triumphant return to the department with this “taste of heaven on earth”:

It was an extra chocolate crumb cake that had been donated to the advocacy department downstairs. Ahhhh! And it went straight to the conference room table with me hot on its trail. There was a layer of chocolate cake on the bottom, the thickest layer of crumb topping I’ve ever encountered on top of that, and dark chocolate drizzle over the whole thing:

I had just prepared myself a little bowl of tortilla chip crumbs (because the leftover meeting snacks ended up on the conference room table, of course), so I cut myself a piece of the cake and threw it on top of the crumbs. And then, because I live on the wild side, I mashed the cake up into the crumbs for the ultimate salty sweet experience (I also mixed in a teeny bit of peanut butter, but shhhhh, don’t tell):

Before I ate the cake, Jessica and I cut up the rest and made sure that everyone in the office got some, regardless of interest, because I wasn’t about to sit with the rest of that thing taunting me all afternoon! Once the cake was distributed, I sat down for some quiet time with my bowl.

I can’t lie. I felt a little bit ill after all that.

I needed something salty. Good thing I had chips and dip mere inches from my mouth. I scooped up the remaining chip crumbs and the dip-covered spoon (I covered the rest of the dip and put it in the fridge because no one needs that hanging around):

And because I just can’t win, the salt left me with a craving for these:

And then it was time to go home! I booked it out of there fast before I could do any more damage. Though I guess I’d already kind of seen to it that there was no damage left to do …

On the way home, Pura offered me half of her tangerine. I accepted because my mouth desperately needed a taste of health!

Thank goodness this internship coincides with my half-marathon training. I would be in BIG trouble otherwise :-D.

I’ve got a sushi dinner lined up with the Brooklyn girls tonight. I’m not particularly hungry, but I expect to find a way around that …

Chained to the computer

Ahhh, technology is driving me insane! Hunter has this big push to make the social work program more “current” and is mandating that all courses have an online component. But the online Blackboard has SO many bugs, and it literally took me four hours to leave a comment about one of the articles I read for class. Gah!

Anywayyyyy, my quinoa salad from Friday night made its final appearance as today’s lunch. With more soymilky chocolate caramel enchantment chai (same tea bag, new water) and a stuffed tomato on the side:

Reassembly of the quinoa salad took place in much the same way as it did yesterday: salad greens on the bottom, warmed salad “substance” in the middle, re-toasted tortilla strips on the top:

I beefed up the salad by sauteeing the quinoa mix with the scrambled egg yolk and kale stems left from last night’s BSI adventures, 2 chopped asparagus spears, and 2 chopped mushrooms. I also mixed in 1/4 chopped cucumber and sprinkled 1/2 tbsp fat free feta on top:

For dinner, I finally got to try a substantial amount of each of my BSI: Kale creations. Three slices of Kale-Crust Pizza and three Stuffed Kale Leaves:

I had the stuffed leaves cold and reheated and re-crisped the pizza slices on a pizza stone in the oven.

Both of these were so delicious. I almost feel guilty saying that since they are my recipes, but ahh, I’m so impressed! The textures, the flavors … incredible. I always get surprised when my kitchen experiments work out. Thank goodness for the BSI — if I didn’t need to be creative and crafty, I probably would have been having steamed kale for dinner tonight!

Dessert was an assortment of little tastes:

And now, I’ve had it with this online homework disaster!! Sorry, Blackboard, we are going to have to part ways for the night because you’re wasting my time. Ohhhhhh well. Laterzzzz. What’s the most frustrating waste of your time?

The most important meal

Well, the eye mask and ear plugs carried me through until 9 am. Which would have been impressive if not for the fact that I went to sleep after 2! I think I was expecting a miracle, but at least I didn’t wake up at 7 …

I put together a slammin’ spread for breakfast:

Chocolate caramel enchantment chai with soymilk and an Earl Grey Biscotti Bite on the side:

img_4460This little strawberry Activia yogurt came my way during the big cleanout of the fridge at work on Friday. There’s no date on it, but it was unopened and passed the sniff test, so all systems were go. Fruity flavored yogurts are too sweet for me these days (yeah, yeah, but 5,000 pieces of candy are not?), so I mixed it with two cups of plain yogurt and scooped about 1/2 cup of that blend into into my teacup along with a sprinkle of cinnamon:

Plus half of a pear with nutmeg and the last of mom’s goodies. I heated them in the oven until they got all crispy on the outside (partly on purpose and partly because I was distracted doing other things), but it worked out scrumptiously because it created a vigorous crunch on the outside and an almost creamy texture on the inside of her phenomenal oat bake. And just look at all of the seeds and grains and the big layer of dark chocolate on top of this kitchen sink muffin heart:

I’ve just refilled a giant mug of tea for the 3rd time (I upgraded teacup size post-picture because big isn’t always beautiful), and I feel sufficiently fueled to buckle down on the homework for the next, errrrr, 10 minutes or so? We’ll see how long I can stay put! What’s your attention span for work that requires sitting still?
